Tawari is the greatest savoured when young.  Its origins are the lowland forests of New Zealand's far north where the stylish tree's waxy white blooms endowment the buzzing insects a light yellow honey with a waiting butterscotch flavour. So subtle and mellow, its impeccable for garnish pancakes, waffles or sorbet. Tawari is a higher fructose honey. This gives the proportions of a quite abate solidifying honey but indeed Tawari has a more pronounced tendency to crystallize than indicated by the ratios.
